The higher the price of bitcoin the more useful it is for spending. I've just been in a bitcoin conference ( in which I pay for everything in BTC) and there were many examples of use cases from all over the world where political repression is the norm.
This is difficult to understand for people with financial privilege but if you are being persecuted by a corrupt government bitcoin is the only way out.
As for volatility the pound, the euro and deben the dollar are more volatile in recent times than bitcoin but that volatility is always down unlike bitcoin which is always up in the long run
